Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 pound ground beef or turkey
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 carrot diced
  • 1 celery stalk diced
  • 1 can 15 oz crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Grated Parmesan cheese for serving optional
  • Fresh basil for garnish optional

Instructions

  • Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add the onion, carrot, and celery. Sauté until softened, about 5-7 minutes. Stir in the garlic and cook for another minute.
  • Brown the Meat: Add the ground meat to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
  • Add Sweet Potatoes: Stir in the diced sweet potatoes, crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring the mixture to a simmer.
  • Simmer: Reduce the heat to low and cover the skillet. Let it simmer for about 20-25 minutes until the sweet potatoes are tender and the flavors meld together.
  • Serve: Toss the sauce with cooked pasta or serve over zucchini noodles. Garnish with grated Parmesan cheese and fresh basil, if desired.
