Ingredients

  • 1 cup cooked quinoa
  • 1 can 15 oz black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1 clove garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg beaten
  • Olive oil for brushing

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Mix the Ingredients: In a large bowl, combine the cooked quinoa, black beans, breadcrumbs, cilantro, red onion, garlic, cumin, chili powder, salt, pepper, and the beaten egg. Mix until well combined.
  • Form the Bites: Using your hands, form the mixture into small balls or patties and place them on the prepared baking sheet.
  • Brush with Olive Oil: Lightly brush the tops of the bites with olive oil for a crispy finish.
  • Bake: Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  • Serve: Allow to cool slightly before serving. Enjoy with a dipping sauce of your choice!
